Shrimp in Creole Sauce
(Camarones en Salsa Creolla)

Ingredients:

8 fresh jumbo shrimp
2 spoon full pure Spanish olive oil
½ tablespoon minced garlic
¼ onion, finely chopped
¼ green bell pepper, finely chopped
¼ teaspoons vinegar
½ cup of tomato paste
¼ teaspoon oregano
¼ cup dry white wine
Salt to taste

In a deep frying pan, heat olive oil.  Add garlic, onion and green bell pepper.  Cook the mixture until onion is translucent.  Add vinegar, tomato paste, oregano, wine, and shrimp.  Mix well and cook over medium heat until mixture begins to bubble.  Reduce heat to a simmer. Cooked for about 5 minutes.
