¼ cup olive oil ¼ onions chopped ¼ green pepper, chopped ¼ cup ripe tomatoes, peeled and chopped 1 teaspoon minced garlic 1 whole bay leaf ¼ chicken cut up in halve 4 pieces of lobster cut up 4 shrimp 4 ounces of fish 4 pieces of cut up king crab legs Salt to taste 1 cup of chicken stock ¼ cup white wine 1 ½ cup of uncooked white rice Garnished
Pour olive oil into a large pan. Add onions and peppers and fry until just limp. Add tomatoes, garlic and bay leaf and cook for about 5 minute. And chicken and sauté until tender, stirring to prevent sticking or burning. Add seafood, waters and wine and bijol salt to taste. When mixture comes to a boil add rice. Stir and bring to a second boil. Cover and bake in oven for about 20 minutes. Being careful not to overcook the seafood.
